From the Kitchen of Joe & Cheryl: Tilapia a la Pepper Jelly

jelliesYou can actually use Tilapia or Flounder fillets. Dunk the fish into egg, then into bread crumbs. I normally add the following to the bread crumbs to enhance the flavors: fresh parsley, Parmesan cheese, garlic powder and black pepper. On a skillet, place fish into a blended olive oil and sauté until fish is golden brown and crisp. Then simply spread the pepper jelly onto the fish and let it melt onto the fillet. If you prefer a healthier version of this recipe, just bake it instead of frying. Serve over your favorite vegetables or rice. Enjoy…
